A great recipe for Sambussak, a popular pastry dish in the Middle East cuisine and mainly served among the Iraq Jews, filled with Hoummus, but it’s possible to change the filling, and it can be fried or baked. It can be a wonderful first course dish that can be frozen and served when guests are coming.
Ingredients for the dough :
- ½ kilo white flour
- 20 gram yeast
- 50 gram melted margarine
- 1¼ cup lukewarm water
- 1 tablespoon sugar
- 1 egg white
- 1 teaspoon salt
- ½ teaspoon black pepper
- Canola Oil for deep frying
Ingredients for the filling :
- 1 Kg chick peas soaked for the night
- 2 onions chopped
- 2 tablespoons oil
- ½ teaspoon salt
- 1 teaspoon cumin
- ½ teaspoon Baharat
- ½ teaspoon black pepper
- ½ teaspoon turmeric
Preparing instructions - The filling:
- Soak the chick peas in water over night. Drain and cook in pot until chick peas soften.
- Remove the skins (optional) and process the hoummus in a food processor for a little while until a homogeneous mixture is received. Afterwards put the hoummus in a bowl.
- Fry the onions in a little oil until golden. Add the onions to the minced hoummus bowl, season with salt, black pepper, cumin and turmeric, mix slightly until a homogeneous mixture is received and put aside.
Preparing instructions - The dough:
- Melt the yeast in half a glass of lukewarm water. Add a tablespoon of sugar and set to ferment in a warm place.
- Put the flour in a wide bowl, make a pit in the center and put the melted margarine and the yeast mixture into it and knead the dough. Add water gradually while kneading until the dough becomes smooth and homogeneous. Let the dough rise for half an hour.
- After the dough has risen, spread it with a roller to a 1 Cm thick leaf on a floured work surface.
- Cut out circles in the dough with a glass. Put in center of each circle a teaspoonful of the filling. Brush the edges of the circle with a little egg white and fold over in half. Press together by pinching between two fingers.
- Deep fry each sambussak in oil, few minutes on each side until golden.
