Ingredients:

  • Half a Kilo frozen or fresh Okra
  • 2 ripe tomatoes, grated
  • 3 cloves of garlic, chopped
  • 1 teaspoon of sugar
  • ½ teaspoon salt
  • 1 teaspoon tomato paste
  • A pinch of sweet paprika
  • ½ a lemon squeezed
  • A pinch of black pepper
  • A little olive oil
Okra in tomato sauce

Preparation:

  1. Rinse the okra thoroughly and dry in a paper towel.
  2. Heat a little olive oil in a pan, add the okra and fry. Stir the okra gently so it won’t brake. Fry until it begins to brown.
  3. Add the grated tomatoes, the tomato paste, cloves of garlic, sweet paprika, salt, pepper, sugar and lemon juice. Stir gently and simmer on a small flame, until liquids got absorbed, approximately 30 minutes.
  • Can be served with white rice
