Pickled lemons add lots of taste and upgrade every food: meat and poultry dishes, fish, salads, pasta and of course – sandwiches. I always care to have a jar of lemons in the fridge on hand so that I have a terrific product that fits lots of dishes.

Ingredients:

  • 1 kg rinsed lemons, cut in slices 1 centimeter wide, cleaned of seeds.
  • 100 Gram Paprika
  • 1 cup olive oil
  • 1 cup conserved lemon juice
  • ¼ cup vinegar
  • 4 tbsp salt
  • 1 tsp crushed black pepper
  • 6 cloves of garlic, peeled and sliced.
  • ½ tsp curry spice (optional)

Preparation instructions:

  1. Prepare the spices mixture – in a bowl put the following ingredients: sweet paprika, salt, pepper, garlic cloves, olive oil, curry spice and mix until the mixture is well blended.
  2. Dip each lemon slice on both its sides in the mixture and put the slices one on top of the other in a jar.
  3. Pour the rest of the mixture into the jar and add the lemon juice and the vinegar. Close the lid of the jar and shake lightly.
  4. Put the sealed jar in a cool and shady place for a week until the lemons soften and shrink a little.
