Pickled lemons add lots of taste and upgrade every food: meat and poultry dishes, fish, salads, pasta and of course – sandwiches. I always care to have a jar of lemons in the fridge on hand so that I have a terrific product that fits lots of dishes.
Ingredients:
- 1 kg rinsed lemons, cut in slices 1 centimeter wide, cleaned of seeds.
- 100 Gram Paprika
- 1 cup olive oil
- 1 cup conserved lemon juice
- ¼ cup vinegar
- 4 tbsp salt
- 1 tsp crushed black pepper
- 6 cloves of garlic, peeled and sliced.
- ½ tsp curry spice (optional)
Preparation instructions:
- Prepare the spices mixture – in a bowl put the following ingredients: sweet paprika, salt, pepper, garlic cloves, olive oil, curry spice and mix until the mixture is well blended.
- Dip each lemon slice on both its sides in the mixture and put the slices one on top of the other in a jar.
- Pour the rest of the mixture into the jar and add the lemon juice and the vinegar. Close the lid of the jar and shake lightly.
- Put the sealed jar in a cool and shady place for a week until the lemons soften and shrink a little.
