A traditional dish of the Iraqi community, delicious!
Ingredients Cubba Bit:
Dough:
- Half kg semolina (fine flour)
- Teaspoon salt
- cup and a Quarter lukewarm water
Filling:
- 1 kg minced meat
- 1/3 cup lukewarm water
- 2 onions, finely chopped
- Celery, chopped half a package (you can use also parsley instead)
- Pinch of black pepper
- Teaspoon sweet paprika
- 2 tablespoons olive oil
Sauce:
- Water
- 4 beets medium in size , peeled and sliced.
- 2 onions, finely chopped
- 3 tablespoons sugar
- Teaspoon olive oil

Dough Preparation:
- Bowl, combine the semolina, add water and some salt. Knead until dough is created (no lumps). Cover the dough and let it rest for 20 minutes.
Filling Preparation
- Cook the ground meat in a pot, add a little water about 1/3 cup and wait until the water disappear waiting until the meat is cooked a bit, seal and wait.
- Now fry the onions until golden,when the onions are ready, take a bowl containing the meat add the fried onions and mix, add the chopped celery and the sweet paprika 2 tablespoons olive oil. Stir until mixture is smooth
- Now prepare the Cubbe: dismantling the dough into small pieces from a each piece of dough we form a small ball and then create a dimple in the middle of the ball with the thumb. Now fill the hole, take a spoon mixture and fill the hole and then close it. Press down firmly. To prepare and place all cubbe tray and set aside
Sauce Preparation
- Boil a large pot of water (half a pot of water) Add the sugar and salt. When boiling a little water, add the beet slices with olive oil.Cook the beets for about 10 minutes.
- When sauce is ready add the cubbe pot and cook for about 35-50 minutes on medium heat.
- When cooking can be served the Kubbe together with the sauce. Advised to submit the sauce with white rice.
