Balkan cuisine eggplant dish from the kitchen and the Middle East, particularly Greece and Turkey characteristic. This Egyptian Arabic name, a name meaning " Cooled" Greek version of the heated is the most common in the world, includes layers of meat, sliced tomatoes and eggplant layers. This recipe is a rich home Moussaka, in one word - delicious.

Ingredients Moussaka:

  • 4 mid size eggplants sliced to circles.
  • 2 large onions, finely diced.
  • 2 cloves garlic, finely chopped.
  • Half a package coriander roughly chopped.
  • 1 tablespoon sweet paprika.
  • Oil for frying.
  • Salt, black pepper.
  • 2 tablespoons tomato paste
  • A pound of ground beef
  • Olive oil
  • Cup bread crumbs

Preparation:

  1. Cut the eggplant into round slices. Salt the slices and leave the bowl for an hour. An hour later wash the eggplant slices wipe well (don't leave water on the slices).
  2. Meanwhile, continue with Preparing the filling: Heat a little oil in a frying pan and fry the onions until golden and wait a little for the onions to cool down a little bit, now put the ground meat in a bowl, add the chopped coriander, add sweet paprika, salt, a pinch of pepper, tablespoon olive oil and fried onions. Stir until mixture is uniform.
  3. Returning to the Eggplants: take a slice of eggplant over it heaping a generous amount of the mixture then take another slice of eggplant and put on top , prepare eggplant sandwiches and arrange on a plate and keep aside.
  4. Beat the egg in a separate bowl and in a separate plate put the breadcrumbs and set aside. Now Heat oil in a frying pan, Dip the sides of the eggplant slices in the n the egg and then breadcrumbs (Roll the slices the two ingredients like rolling a barrel on the side ). Fry the slices in a pan until they are lightly golden. Then, remove the slices and place on plate with paper towels to absorb the oil.
  5. arrange the eggplant sandwiches in a greased baking pan, should be arrange with little spaces as can be . Place the baking pan on the side to prepare the sauce.
  6. Preparing the sauce:
    • Take a half cup of warm water and add the tomato paste, tablespoon of olive oil, a little sweet paprika, chopped garlic cloves, some salt and pepper now stir to a lump less mixture . Pour mixture with a spoon over Eggplants sandwiches , sprinkle all the sides, you can also scatter a little cilantro.
  7. Place the preheated oven and bake at 180 degrees for 45 minutes
