A quick light tasty supper.
Ingredients:
- 2 tomatoes, diced small
- 2 cucumbers, diced small
- 1 ripe avocado, diced small
- 1 purple onion, diced small
- 4 stalks of green onion sliced small
- ½ teaspoon salt
- 1 teaspoon olive oil
- 1 teaspoon grape seeds oil (optional)
- Juice from ½ a lemon
- 1 tablespoon butter
- 200 gr. Haloumi cheese, diced
Preparation:
- Mix in the tomatoes, cucumbers, avocado, onions in a bowl. Add olive oil and grape seed oil (optional). Season with salt and mix lightly. Set the salad aside.
- Melt the butter in the frying pan. Add Haloumi cubes and fry until golden.
- Arrange on a salad plate, put the Haloumi cheese cubes on top and serve.
- You can add an hard boiled eggs.
