Vegetable salad with Haloumi cheese PDF Print E-mail

A quick light tasty supper.

Ingredients:

  • 2 tomatoes, diced small
  • 2 cucumbers, diced small
  • 1 ripe avocado, diced small
  • 1 purple onion, diced small
  • 4 stalks of green onion sliced small
  • ½ teaspoon salt
  • 1 teaspoon olive oil
  • 1 teaspoon grape seeds oil (optional)
  • Juice from ½ a lemon
  • 1 tablespoon butter
  • 200 gr. Haloumi cheese, diced

Preparation:

  1. Mix in the tomatoes, cucumbers, avocado, onions in a bowl. Add olive oil and grape seed oil (optional). Season with salt and mix lightly. Set the salad aside.
  2. Melt the butter in the frying pan. Add Haloumi cubes and fry until golden.
  3. Arrange on a salad plate, put the Haloumi cheese cubes on top and serve.
  • You can add an hard boiled eggs.
