Ingredients:
- 1 Large cauliflower
- 2 zucchini, peeled
- 4 heaping tablespoons plain flour
- 2 eggs, beaten with a fork
- Yogurt (preferred 3% fat )
- Box of cream cheese
- 150g grated Swiss cheese
- Teaspoon of salt
- Pinch of black pepper
- Pinch of nutmeg
- Breadcrumbs
Preparation:
- Put in a pot of water the cauliflower and zucchini, bring to a boil and cook for about 7 minutes to soften.
- Squash in a bowl the cauliflower and zucchini , not entirely crush, but to leave large pieces.
- Add to the bowl all the rest of the ingredients and mix.
- Add the spices (salt , black pepper and nutmeg) and mix
- Oil a deep baking pan Scatter bread crumbs at the bottom Put in the batter and smooth top and scatter more crumbs on the top (grants a crispy pie top a as well as the bottom).
- Garnish with cherry tomatoes or any other tasty vegetable that you like.
- Bake for about 50 minutes at 170 degrees Celsius.
- Note: If you want a slim pie use cheese with low fat percentage.
