Traditional Iraqi date cookies, delicious and easy to prepare.

Ingredients:

Dough:
  • 1 kg flour
  • 3 tablespoons dry yeast or yeast
  • 2 tablespoons oil
  • 1 tablespoon salt
  • 2 tablespoons sugar
  • 2 packages of butter-flavored margarine
  • 2 cups lukewarm water
  • teaspoon baking Hawaej (optional – a spice from the Iraqi kitchen)
  • One package of baking powder
Filling:
  • A packet of dates seed less (500 g)
  • 3 tablespoons water
  • 2 tablespoons oil
Topping:
  • 1 egg, beaten
  • Sesame

Preparation:

Preparation of dough :

Sift the flour into a bowl, add the the yeast, sugar and salt. Mix and gradually add the water. Keep stirring and add the margarine, oil and a teaspoon Hawaej . Knead until the dough is smooth and flexible. Then cover the dough with a towel and let the dough rest for 40 minutes.

Preparation of the Filling:

put the dates into a bowl, add water and oil and heat in microwave for 2-3 minutes. Remove and stir well until the date mixture formed a soft mixture but not a liquidly form. If the mixture is too dry add more water.

Preparation of the Cookies

Divide the dough and form balls about the size of a ping pong ball. Grease the working counter or a baking pan, then take a ball of dough and flatten it with your hand. Put the some of the date mixture in the center of the flatten ball, then spoon the dough to closed and form a filled ball. That makes all the dough balls filled with a mixture of dates.

After we made all the filed balls, now flatten with a rolling pin all the filled balls. Create any cookie shape of a disc. Cookie should be thin.

Put into baking pan the cookies, make sure to order the cookies with a space between them. Now punch holes to the cookie with a fork, Brush with egg and sprinkle with some sesame seeds.

Bake in a preheated oven to 180c degrees for 10-15 minutes until cookies are golden.

  • Cookies can be stored air tight for a week. You can also freeze them for longer storing.
