Delicious cookies my mother made for my henna ceremony. Every time I passed the cookies on the table I got one, then another, then another, until I realized that "addiction" and I must stop before it's too late and I gain a few pounds. Wonderful cookies, long lasting when store them in a jar or box.
Ingredients:
- 200 gr butter
- 2 cups crushed almonds
- Six and a half cups plain flour
- Baking powder 2 packets
- 4 tablespoons oil
- Cup brown sugar
- 2 drops almond extract
- 4 egg yolks (the yellow part inside the egg)
- Quarter teaspoon salt
Preparation:
- Blend in a mixer the ingredients, put the flour, baking powder and butter and gradually add the crushed almonds, brown sugar, egg yolks, oil. Blend until dough is soft.
- Transfer the dough to a bowl, cover and refrigerate for an hour.
- After an hour, remove the dough and begin to work with your hands. Form small balls about the size of 3-4 cm and mash slightly.
- Arrange the balls on a greased baking pan. Insert to the Oven for 20-25 minutes in the heat of 160 degrees. when the cookies are golden that means they are ready.
- Remove the cookies from the oven and wait for them to cool off, then add powdered sugar on them.
